What is your favorite thing to can or what is your favorite thing about canning?

My favorite thing to can depends on what season it is and what I have in my freezer from last years harvest. I have to say that after I’ve done a recipe 2 or 3 times I am pretty sick of that particular recipe and it’s main ingredient! My favorite thing about canning in general is the satisfaction it gives me, whether I am picking pears or cutting up a vegetable to be frozen for later use. Some days I just want to do a simple recipe that doesn’t require

much thought or a two day recipe like the Cranberry, apple mint jelly(the mint is my addition) I have dripping to process tonight or tomorrow. Other days all I want to do is process ingredients to go in the freezer , yesterday was one of those day . I cut up and packed a  5 gallon buckets worth of Tomatillos (that were picked  right before the frost last week) and 5 lbs of green and hot peppers .

After I finish canning  and have put my new Maslin pan away  , I can  take off my apron and know I have done a good days work!
