Making good pork is just too easy.
I have a nasty secret to reveal.
Growing good pork is very easy. And good, farm raised pork is about the most different thing to what you get from the factory food industry of anything that we sell. I know that last sentence is not strictly 'Strunk and White' but I think you know what I mean.
Pigs are omnivores. They will eat anything. This does make them more dangerous to keep and all my friends who raise pigs are very careful.
It also makes them easy to feed cheaply. And poorly. And it shows in the meat.
Cows, sheep, chickens have restricted diets due to their digestive systems. You cannot cheat, feeding a cow garbage.
We do not allow our pigs to eat anything but grass, hay and grain. No bread. No slops (slops is 'edible' garbage). You can taste the difference.
The reason the grass and hay is important is that all grain makes for bland, white, mushy or tough meat.
Most folks are shocked at the difference. We are used to it now.
